One other thing is that overstuffing the limbs and head can be a problem. It also helps to have the part of the limb that you sew be perfectly empty and flat.

I'm impressed with your piecing work on the belly. I was thinking another way to do it is the way I did the back of my baby blanket (with somewhat bad results). Use one piece of fabric and then cut a slit into it. Using a matching thread and better hand-sewing techniques than I did, you could just sew it up after you stuff it. I'm sure it comes out better your way, just more effort and more fabric waste.
